I love a late autumn harvest. It seems like every year is an Indian Summer out here in Oregon. The tomatoes, eggplants and peppers hang on way longer than I’d think possible.

I’m lucky because of it!

Today’s late fall harvest consisted of:

• Classic Eggplant
• Lemon Cucumber
• Jalapeno peppers
• California wonder peppers (green)
• Sweet chili peppers
• Hot chili peppers
• Black Beauty Zucchini
